I've been MIA for a bit due to the demands of classes and a sick kitty so I'm behind on posting recipes. Classes are really cutting into my cooking time and I really rely on quick no-hassle meals not to mention the use of my Crockpot I can't take credit for this recipe as the main idea came from a friend, Jessica, and let me tell you, it's great! Beer, BBQ sauce, chicken, and a Crockpot - easy! I added a few seasonings and made Cole Slaw for a side - simple and delish! Don't take my word for it...try it yourself!
Ingredients:
3 boneless/skinless chicken breasts (I used 4 good sized ones)
1 can or bottle of beer
1 - 18 oz. bottle of Sweet Baby Rays BBQ sauce (or any of your choosing)
1/2 teaspoon Garlic Powder
1/2 teaspoon Basil
1/2 teaspoon Paprika
1/2 teaspoon Black Pepper
1/2 teaspoon Basil
1/2 teaspoon Paprika
1/2 teaspoon Black Pepper
Instructions:
Mix seasonings in a small bowl and rub onto chicken, coating both sides.
Place chicken in Crockpot
Top with BBQ sauce and beer.
Cook on high 4-5hrs or Low 7-8 hrs. or until chicken pulls apart.
Serve on rolls with coleslaw (optional).
*I cooked the chicken on low for about 5.5 hours and then shredded the chicken and let it cook for about another hour.
